Ingredients
- 1 bag of your favorite tortilla chips
- 1 can of black beans, drained and rinsed
- 1 cup of diced tomatoes
- 1/2 cup of chopped cilantro
- 1/2 cup of diced red onion
- 1 ripe avocado, diced
- 1/2 cup of corn kernels (fresh, canned, or frozen)
- 1/2 cup of sour cream
- 2 limes, cut into wedges
Instructions
- Preheat your oven to 375°F (190°C).
- Line a large sheet pan with parchment paper or aluminum foil. This will make cleanup a breeze.
- Spread the tortilla chips evenly across the sheet pan, creating a single layer.
- Sprinkle the drained and rinsed black beans evenly over the chips.
- Scatter the diced tomatoes and corn kernels over the chips and beans.
- Place the sheet pan in the preheated oven for about 10-12 minutes or until the chips are nicely toasted.
- While the nachos are baking, prepare your toppings. Dice the red onion, avocado, and cilantro. Cut the limes into wedges.
- Remove the nachos from the oven when they’re done. Top them with the diced red onion, avocado, and cilantro. Squeeze fresh lime juice all over the nachos.
- Finish by adding a drizzle of sour cream evenly across the nachos.
- Place the loaded sheet pan of nachos in the center of the table and let everyone dig in. Don’t forget extra lime wedges for those who want an extra zing!
