  • 2 small eggplants, sliced into thin strips
  • 1 red bell pepper, sliced

  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons vegetable oil
  • 2 scallions, chopped (for garnish)

Instructions

  1. Start by seasoning the sliced eggplant with a sprinkle of salt. Allow them to rest for about 10 minutes to draw out excess moisture. Pat them dry with a paper towel.
  2. Heat a tablespoon of oil in a large pan or wok over medium-high heat. Add the eggplant slices and cook for about 2-3 minutes on each side until they turn golden and tender. Remove the eggplant from the pan and set aside.
