  • Hearty bread, sliced (Sourdough, French baguette, crunchy whole wheat, etc)
  • 1 cup ricotta cheese
  • 1/4 cup sliced black olives
  • Fresh basil leaves, torn, for garnish
  • Olive oil, for brushing
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or grill pan over medium heat.
  2. Brush the tomato slices with olive oil and season with salt and pepper.
  3. Grill the tomato slices for about 2 minutes per side until they develop lovely grill marks. Set them aside.
  4. While the tomatoes are grilling, lightly brush the bread with olive oil and grill them for about 1 minute per side until they turn golden and crispy.
