Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, and celery, and cook for 5 minutes until softened.
  2. Stir in the minced garlic, Cajun seasoning, dried thyme, dried oregano, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.
  3. Add the diced tomatoes with their juice and the chicken broth to the pot. Bring the mixture to a simmer and let it cook for 10 minutes to allow the flavors to meld together.
  4. Stir in the shredded rotisserie chicken and frozen okra. Continue simmering for another 5 minutes until the okra is tender.

Notes
