  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes
  • Yield: 2 servings 1x

Ingredients

Units Scale
  • 8 ounces pappardelle pasta
  • 2 tablespoons olive oil
  • 8 ounces mushrooms, sliced (cremini, shiitake, or your choice)
  • 2 cloves garlic, minced
  • 1 teaspoon chopped fresh rosemary
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to the package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until they’re golden and tender, about 5-7 minutes.
  3. Stir in the minced garlic and chopped rosemary, cooking for an additional 1-2 minutes until fragrant.
  4. Once the pasta is cooked, reserve about 1/2 cup of pasta water and drain the rest. Add the cooked pasta to the skillet with the mushrooms, along with a splash of the reserved pasta water. Toss to combine.
  5. Sprinkle in the grated Parmesan cheese, stirring to create a creamy sauce that coats the pasta. If needed, add more pasta water to achieve the desired consistency. Season with salt and black pepper to taste.
  6. Remove from heat and garnish with fresh chopped parsley.

Notes

For the best-tasting results, do remember to reserve some pasta water after cooking the noodles. This helps create an extra silky sauce that clings to the pasta. You can also add a touch of red pepper flakes to the sauce for a hint of heat. Feel free to experiment with different mushroom varieties for a unique flavor profile if desired. For the best texture and flavor, use freshly grated Parmesan cheese. Enjoy!
