  • Prep Time: 15 minutes
  • Cook Time: 15 minutes
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 4 boneless pork chops, pounded thin
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup sesame seeds
  • Salt and pepper
  • 2 tablespoons vegetable oil
  • 6 cups mixed greens
  • 1/4 cup rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 2 tablespoons sesame oil

Instructions

  1. Preheat the oven to 400°F.
  2. In a shallow bowl, season the flour with salt and pepper. In another shallow bowl, beat the eggs. In a third shallow bowl, mix together the panko breadcrumbs and sesame seeds.
  3. Dredge each pork chop in the seasoned flour, shaking off any excess. Dip the pork chops in the beaten eggs, then coat with the breadcrumb mixture.
  4. Heat the vegetable oil in a large oven-safe skillet over medium-high heat. Add the pork chops and cook until golden brown, about 2-3 minutes per side.
  5. Transfer the skillet to the oven and bake for 10-12 minutes, or until the pork is cooked through.
  6. While the pork is cooking, make the dressing. In a small bowl, whisk together the rice vinegar, honey, soy sauce, and sesame oil.
  7. To serve, divide the mixed greens between four plates. Top each plate with a pork chop and drizzle with the dressing.

Notes

For best results, make sure to pound the pork chops thin and evenly for cooking. Also, be sure to use an oven-safe skillet to avoid transferring the pork to another dish for baking. The dressing can be adjusted to taste by adding more honey or soy sauce. Finally, serve this dish immediately and while the pork is piping hot!

Fennel, Cucumber, and Mint Salad

To kick things off, thinly slice your fennel bulb, aiming for delicate, almost translucent slices to ensure every bite is crisp. Next, slice your cucumber into rounds or half-moons, depending on your preference. These will add a cool, hydrating touch to the salad. Chop up some fresh mint leaves, which will infuse the salad with a burst of aromatic freshness. Add in some chopped green onions for a subtle zing. Once everything's in your salad bowl, give it a toss. A light dressing made from lemon juice, olive oil, salt, and pepper will complement the fresh ingredients without overpowering them. Drizzle it over, toss once more, and there you have it!

Leafy Greens Side Salad

Kick things off with a bed of your favorite mixed greens—whether it's spinach, arugula, romaine, or a combination of all. Next, layer on thinly sliced red onion, adding a sharp and colorful zing. Slice a cucumber into neat rounds, offering cool and refreshing bites throughout the salad. Halve some juicy cherry tomatoes and scatter them in, lending their sweet-tart bursts. Finally, dot the salad with pitted green olives, introducing a briny depth. For dressing, a simple vinaigrette made of olive oil, lemon juice, salt, and pepper does wonders. Drizzle it over the salad, toss everything gently, and serve.

Ginger Limeade

Start by peeling a fresh ginger root, roughly about a 2-inch piece, and slice it into thin discs. In a saucepan, simmer these ginger slices with water and sugar, allowing the mixture to become a spicy simple syrup as the ginger infuses its heat. While this brews, roll and juice fresh limes until you have about a cup of vibrant lime juice. Once your ginger-infused syrup is ready and slightly cooled, combine it with the lime juice in a pitcher. Add 4-5 cups of cold water, mixing well and adjusting to your preferred balance of sweet, spicy, and sour. For a finishing touch and a pop of color, consider adding lime slices or even a sprig of fresh mint.
