Ingredients

  • 1 cucumber, peeled and seeded
  • 1 red bell pepper, seeded
  • 1 small red onion
  • 2 garlic cloves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: chopped cucumber, bell pepper, red onion, and fresh herbs

Instructions

  1. Roughly chop the tomatoes, cucumber, bell pepper, onion, and garlic.
  2. Place all the chopped vegetables in a blender or food processor.
  3. Add the extra virgin olive oil, red wine vinegar, salt, and black pepper.
  4. Blend the ingredients until smooth and well combined.
  5. If desired, strain the gazpacho through a fine-mesh sieve to remove any solids.
  6. Transfer the gazpacho to a large bowl or pitcher and refrigerate for at least 1 hour to chill.
  7. Serve the gazpacho in bowls or glasses and garnish with chopped cucumber, bell pepper, red onion, and fresh herbs, if desired.

Use ripe, juicy tomatoes for the best flavor. If you can, choose tomatoes that are specifically suited for making gazpacho, such as beefsteak or Roma tomatoes.
