Ingredients
- 4 slices of bread (sourdough or Italian bread works well)
- 4 oz. fresh mozzarella cheese, sliced
- 2 medium-sized tomatoes, sliced
- 8–10 fresh basil leaves
- 2 tbsp. extra-virgin olive oil
- Salt and black pepper, to taste
Instructions
- Preheat a panini press or grill pan on medium-high heat.
- Brush one side of each bread slice with olive oil.
- On the other side of the bread, layer the mozzarella, tomato, and basil leaves, then sprinkle with salt and pepper.
- Top with the remaining slices of bread, oil side up.
- Place the sandwich in the panini press or grill pan and cook for 2-3 minutes, or until the bread is golden brown and the cheese is melted.
- Cut the sandwich in half and serve hot.
