Units Scale
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeño pepper, seeded and diced
  • 1 red bell pepper, diced
  • 2 cups cooked chicken breast, shredded
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Avocado and sour cream for topping

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, minced garlic, jalapeño pepper, and red bell pepper. Sauté for 5 minutes, or until the vegetables are softened.
  2. Add the shredded chicken, white beans, frozen corn kernels, chicken broth, ground cumin, dried oregano, and chili powder to the pot. Stir well to combine.
  3. Bring the chili to a simmer and let it cook for 15 minutes, allowing the flavors to meld together.
  4. Season with salt and pepper to taste.
  5. Ladle the white chicken chili into bowls and top each serving with sliced avocado and a dollop of sour cream.

Notes

To save time, use pre-cooked or rotisserie chicken for this recipe. Simply shred the chicken before adding it to the pot. If you prefer a spicier chili, leave the seeds in the jalapeño pepper or add some crushed red pepper flakes. For a creamier texture, you can blend a portion of the chili using an immersion blender or by transferring some of the chili to a blender and then returning it to the pot. Garnish your white chicken chili with additional toppings like chopped fresh cilantro, grated cheese, or a squeeze of lime juice for added freshness. Enjoy!
