  • Whole grain burger buns
  • Fresh arugula leaves
  • Thinly sliced red onion
  • Hummus

For the pickled cucumbers:

  • 1 cucumber, thinly sliced
  • 1/4 cup white vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt

Instructions

  1. In a food processor, combine the chickpeas, breadcrumbs, red onion, minced garlic, ground cumin, paprika, salt, and pepper.
  2. Pulse until the mixture is well combined but still slightly chunky.
  3. Form the mixture into 4 burger patties.
  4. Heat olive oil in a skillet over medium-high heat. Cook the burgers for about 4-5 minutes on each side, or until they are golden brown and firm.
  5. In a bowl, combine the vinegar, sugar, and salt. Stir until the sugar and salt are dissolved.
  6. Add the thinly sliced cucumber to the vinegar mixture and toss to coat. Let it sit for at least 10 minutes, stirring occasionally.
  7. Toast the whole grain burger buns if desired.
  8. Spread a generous layer of hummus on the bottom bun then add some pickled cucumbers, and thinly sliced red onion.
  9. Place a chickpea burger on top of the fixings and top with some fresh arugula.
  10. Add the other half of the bun and secure the burger with a toothpick if needed.
